Corks Out (
www.corksout.com) is on Watergate St (it used to be Quellyn Roberts, a family-owned wine merchants). It has a very atmospheric undercroft, what I imagine are perfect conditions for keeping wine, and now a new system letting you try really expensive wines before you buy.
